Sencha Tea
CTC production uses a leaf shredder which macerates the leaves (crushing, tearing, and curling them, hence the name) into fine pieces. These teas will brew very quickly and produce and a bold, powerful cup of tea. Black tea originated in China, but its popularity in the west has made most of it destined for export. It’s also the most commonly used tea for blending with other ingredients into classic styles such as earl grey or masala chai.

History of the tea trade
“Herbal teas” are not from the Camellia sinensis plant and because of this the vast majority of them are caffeine free. Since all tea comes from the Camellia sinensis plant, the differences between the types of tea are primarily due to how they are processed after the leaves are picked. Called ‘Black Dragon’ in China, Oolong falls somewhere between the black and green tea varieties. One of the most well-known black teas is the variety lapsang souchong. Additives of sugar, cream, or milk can reduce the polyphenol content of tea.

Compressed tea was the most popular form of tea in China during the Tang dynasty. In Mongolia, tea bricks were ubiquitous enough to be used as a form of currency. Alternatively, because tea easily retains odours, it can be placed in proximity to an aromatic ingredient to absorb its aroma, as in traditional jasmine tea. Tea blending is the combination of different teas together to achieve the final product. Such teas may combine others from the same cultivation area or several different ones. The Han dynasty work “The Contract for a Youth”, written by Wang Bao in 59 BC, contains the first known reference to boiling tea.
